Swimming has started. My little guppy is learning to swim along with his two cousins.

What fun and what a tan line my boy is getting.

I am so thankful for these summer days.

Don't remind me it will all be over in a few short months. I cherish these days as my time to regroup and recoup from a busy school year.

This is my official swim meet job. Little man. My main objective: don't let him burn.

My second is to pick up the camera whenever I can.

Swim meets make for a very long day.

Six AM comes very early to this want to wake up at 9 kinda gal :)

Here is my first of several food blogs.

I plan to post my best and easiest recipes.

These are the recipes everyone raves about.

Hope you enjoy.

Here are the simple ingredients: 1 can of Rotel tomatoes, 1 can of shoepeg corn(drained), 1 Italian seasoning packet, 2 cans of black beans(drained and rinsed), 6 sliced green onions

(no rabbit needed)

chop the green onion

rinse the beans & drain the shoepeg corn

add all to a bowl and pour on the Italian seasoning packet

mix and serve

some variations: black eyed peas instead of black beans,

or add avocado, yum.

So easy and so good.
